Ingredients

• 7 1/2 oz plain flour
• pinch of salt
• 3 1/2 oz fat (half lard (if you wish) and half margarine)
• 7 tsp cold water
• 3/4 eating apples
• few cloves
• brown sugar
• milk to glaze the pastry

Method

1. Sift the flour and salt into a bowl.
2. Cut up the fat into the flour with a knife.
3. Using your finger tips, rub the fat into the flour until it becomes like bread crumbs and no lumps of fat remain.
4. Add the water and mix with a knife distributing evenly.
5. Using your hands gather the mixture together into a ball and then kneed gently until shiny.
6. Roll out the pastry on a floured board or surface and line the bottom and sides of a 7-inch pie plate or individual pie dishes.
7. Add apple, clove and sugar to the pastry.
8. Cut out tops to go over the pastry, brush the edges of the pastry with water and place the tops on. Crimp round the edges and cut off overhanging pastry.
9. Brush the tops with milk and bake in the oven at gas mark 6 for about 30 mins, until the pastry is golden.
